This lot comes from smallholders in Yunnan's golden coffee belt, hand-picked and fully washed at the station. Bean Doe roasts it just past first crack to keep the florals intact while building enough body to stand up to milk.
Dial it in around 1:2 over 28–32 seconds. The cup opens with bergamot and citrus peel, settles into red plum, and finishes long on dark honey. Rested four days off the roast for the cleanest extraction.
